What force can components exert without causing serious injury? Where can I find this data?

There is currently no generally applicable data that addresses severity thresholds.
However, there are some occasional indications in Type C standards: A risk of pinching from > 150N is classed as a hazardous movement.

However, even this value seems rather imprecise if you consider sharp pinch and shear points, for example.

So it is absolutely critical that each danger point is examined individually. The risk level arises from all the properties of the danger point.
